My kids love pancakes for breakfast and since they are so quick and easy to whip up, they are a regular go-to breakfast at our house. They also freeze wonderfully if you have leftovers you want to save for another day.

My kids love pancakes for breakfast and since they are so quick and easy to whip up, they are a regular go-to breakfast at our house. They also freeze wonderfully if you have leftovers you want to save for another day. I am a huge fan of all meals that I can make ahead and freeze! Especially breakfasts, since I don’t always want to cook a big breakfast as soon as I wake up in the morning. Although, no matter how many fluffy homemade pancakes I make, there never seem to be enough left for another meal.


I have tried and tweaked lots of different recipes before settling on this simple and yummy recipe for fluffy homemade pancakes. The most important thing to make sure you end up with fluffy pancakes is not to make too big of batches. I find the batter gets runny if I do double batches, so I just mix up one batch at a time instead of doubling the recipe.


Pancakes are a great breakfast option because they are so versatile! You can always add berries or even chocolate chips for variety and there are endless toppings to use on them, including syrups, jams, fruit, or even peanut butter!

Fluffy Homemade Pancakes Recipe


1 cup flour

2 Tb sugar

2 tsp baking powder

½ tsp salt

1 c milk

2 Tb melted butter or vegetable oil

1 large egg

1 tsp vanilla


Measure the dry ingredients into a mixing bowl. 


Stir until combined.


Add the wet ingredients to the dry ingredients.


Stir until well combined, but without over mixing.


Heat a griddle or frying pan to a medium heat, until the pan will sizzle if you drop water on it.


Grease pan with butter if desired or required.


Add batter to griddle or pan using a 1/3 cup measure.


Cook until bubbles start to form on the top of the pancakes, then flip over and cook the other side until golden brown.


Add your preferred toppings and enjoy!
