Homesteaders Rhubarb Muffin Recipe
One of my favourite rhubarb recipes is Rhubarb muffins. They are fluffy and tart and sweet in a wonderful way and the optional streusel topping is delicious! Try out our Rhubarb Muffin Recipe.

Rhubarb Muffins

Rhubarb season is something that I look forward to every year. I am always looking for ways to use it, such as new jams or baking recipes. One of my favourite rhubarb recipes is Rhubarb muffins. They are fluffy and tart and sweet in a wonderful way and the optional streusel topping is delicious! My kids don’t always like rhubarb but they sure went through these Rhubarb muffins quickly! I love baking muffins because they are so easy to bake a big batch and freeze them for later. I just make sure to cool completely before storing in reseal able freezer bags until we need them. They thaw quickly for a breakfast on the go or just throw one frozen into your lunch box and it will be thawed and ready when you get hungry.


Handy tip: tossing Rhubarb pieces with flour will help to keep the fruit evenly distributed in the muffins instead of sinking to the bottom.

Rhubarb Muffins

Rhubarb Muffin Recipe

1 cup rhubarb, chopped

1 ¾ cups flour, plus one Tablespoon

½ cup sugar

2 tsp baking powder

¼ tsp salt

1 egg, beaten

¾ cup milk

¼ cup vegetable oil

1 tsp vanilla

Streusel topping, optional



Rhubarb Muffins

Preheat your oven to 400 degrees.


Prepare your muffin tins by either greasing well or lining with muffin liners.


Toss chopped rhubarb with 1 tablespoon of flour and set aside.


Mix flour, sugar, baking powder and salt in a large mixing bowl.


In a separate bowl, mix egg, milk, vanilla and oil together.


Make a well in the flour mixture and then add the wet ingredients.


Stir until just moistened.


Shake excess flour off of rhubarb and fold into the batter.


Fill each muffin cup to 2/3 full and top with streusel topping if desired.


Bake for 18 to 20 minutes or until a tester comes out clean.


Remove muffins from pan and allow to cool completely on a cooling rack.


Optional Streusel Topping:


3 Tbsp flour

3Tbsp butter

3 Tbsp brown sugar

¼ tsp cinnamon

2 Tbsp pecans or almonds


Combine all ingredients in a bowl, stirring with a fork until crumbly.


Sprinkle over muffins before baking.
