We have been getting a lot of questions from people who are interested in Canning, but don't know where to start.


While we would LOVE to have our own canning course, its not something we can do at the moment. So, we have been talking to Contact North. They have found us a few online courses, that are free and can be taken anytime!

Canning the Best Blueberry Jam


In this class, our resident jamming expert, Karen Solomon, shares a simple recipe for a classic favorite: blueberry jam. Karen demonstrates exactly how to make this stove-top recipe, and she also walks you through the basics for properly canning the jars, ensuring a long shelf-life. If you would like to veer away from the classic, Karen provides lots of ideas for add-in flavors, like fruity liqueurs, fresh herbs, citrus zest and extracts.


Learn how to: Prepare jars for canning, make blueberry jam, Incorporate your own flavor additions, can the jam jars.


 


Canning Basics: Make Cumin-Scented Pickled Carrots


Learn the ins and outs of canning from preserving pro, Karen. In this class, Karen demystifies the canning process, explaining the necessary (and unnecessary) tools and rules for hot water bath canning as well as important safety tips. For first time canners, Karen recommends starting with a pickled carrot, and she provides a yummy recipe for a basic brine. Note that this brine can be used to pickle any veggie you like – consider this your go-to recipe for all of your pickling needs.


Learn how to: Determine which vegetables are eligible for home canning, sterilize jars and lids, properly pack a jar, check a seal.


 


Preserves, Liqueurs and Infusions


In this class, Kelly and Sarah share six recipes for holiday preserves, all of which make perfect gifts for your favorite foodies. From boozy concoctions to pickled veggies, each recipe is super-simple, quick-to-make, and requires a relatively short wait period before they can be consumed. Alcohol-based recipes include a grapefruit-ginger infused vodka, a cherry-vanilla-orange bourbon, coffee liqueur, and orange-fig bitters. For non-alcoholic options, recipes include a zippy preserved lemon, a no-fuss quick pickle, or a tart, sweet syrup called a shrub made from cranberries and pomegranates.


Learn how to: Master the basics of infusing alcohol, make a pickling brine, ideas for how to use the final products in recipes and cocktails.


 


Canning Basics: How to Can Tomatoes


Learn how to preserve the taste of late-summer garden tomatoes with canning pro, Karen Solomon. Karen will teach you the basics of selecting and peeling perfectly ripe tomatoes, then show you how to safely can and process them so you can enjoy the taste of summer sunshine all year long. These whole canned tomatoes are perfect for soups, sauces, and everyday cooking throughout the year.


Learn how to: Sterilize jars, blanch and peel tomatoes, properly preserve tomatoes with salt and lemon, process jars in hot water bath.
