Delicious Rhubarb Cake

Rhubarb is one of those things that you either love it or you hate it. I love it! I remember harvesting rhubarb as a kid and eating the tart stalks raw, with the end dipped in sugar. Now as an adult I love to use it in baked treats like this delicious rhubarb cake. Try this delicious rhubarb cake recipe!


I made this cake last year to bring to a gathering and it was a winner! Everyone enjoyed it so much that I knew that I would be making this again!


This time around the cake turned out more moist, almost like a rhubarb crumble instead of a cake. This was because I used frozen rhubarb instead of fresh and should have let the water drain out more before baking. The cake, however, was still delicious. It was like inventing a whole new dessert! If you are wanting a cake though I would advise to use fresh rhubarb or drain and pat dry your frozen and thawed rhubarb prior to baking. Either way it is a delicious treat!

Rhubarb Cake

Delicious Rhubarb Cake Recipe

2 eggs, beaten

1 ¼ cups sugar

1 tsp baking soda

½ tsp salt

2 cups flour

1 cup sour cream or yogurt

2 ½ cups fresh rhubarb, chopped


Preheat oven to 350 degrees.


Mix together eggs and sugar with an electric mixer.


Add baking soda, salt, flour and sour cream and continue to mix until well combined.


Fold in the chopped rhubarb and then pour batter into a greased and floured 9x13 pan.


Topping:


1 cup sugar

¼ cup flour

¼ cup butter

1 tsp cinnamon


Combine all 4 ingredients into a bowl and mix with a fork until crumbly.


Sprinkle over the top of the batter and bake for 45 minutes or until a tester comes out clean.
