Three ingredient Recipe for Banana Breakfast Bars. Banana breakfast bars are yummy and filling, but not overly sweet like banana bread.

Bananas and kids are a funny thing. They eat 12 in a day, or 3 will sit on the counter until they turn into a puddle. So what is a mom to do? Make some Banana Breakfast Bars of course!

Banana bread is the first thing we all think of but sometimes we just need something new, and different. Banana breakfast bars are yummy and filling, but not overly sweet like banana bread can often seem. They are also super fast and simple to fix up, having only 3 ingredients. Rolled oats, peanut butter, and ripe bananas, the older the better, since that is the source of sweetness in these squares.


I love the simple recipes that don’t dirty a lot of dishes, are quick to whip up, use the simple ingredients I have on hand and are easily freezable to enjoy in the future. This one ticks all the boxes! And as an added bonus they can easily be made gluten free by using gluten free rolled oats!



Banana Breakfast Bars Recipe



1 cup peanut butter

4 cups of rolled oats

6-7 medium bananas, mashed

½ to 1 cup of chocolate chips, optional

Preheat the oven to 350 degrees

In a large mixing bowl, add peeled bananas and crush with a potato masher or a fork. 

Combine remaining ingredients and mix well.

Spoon the batter into an 8x8 pan lined with parchment paper.

Spread the batter out evenly and bake for 25-30 minutes until a cake tester comes out clean.


Allow bars to cool in the pan for at least 10 minutes to firm up before moving to a cooling rack to cool completely.

To store these banana breakfast bars, keep in an air tight container on the counter for up to 3 days or wrap bars individually and freeze for 2-3 months for a nice morning snack whenever you need something quick. Great for an on-the-go breakfast when you are in a rush or just to accompany your morning cup of coffee.
